Amazing Pink Ice Cream
  • 100g frozen blueberries
  • 100g frozen raspberries
  • 160-200ml almond or coconut milk (I use the Koko brand)
  • 40g rolled oats
  • 1-2 tbsp honey (depends on how sweet you like things, start with one and see what you think?)
  1. Just pop the frozen berries into a bowl with the other ingredients (add honey later) and blitz together with a stick blender. If you don't have one a Magimix would work fine.
  2. Taste and then add the honey, tasting until you get it just how you like it.
  3. As the berries are frozen, it will turn into an instant soft-set ice cream.
  4. This is delicious served with some sliced banana or seasonal fruit.
  5. If you don't eat it all keep it in the freezer for another time. I would take it out 5 minutes before serving as it sets pretty hard.
  6. It will go pretty quickly…
