Quick Tzatziki
  • ½ a cucumber, grated on largest grate
  • 4 large tbsp Greek yoghurt
  • A few sprigs of fresh mint, chopped
  • Salt and pepper
  1. Grate the cucumber and with your hands squeeze out the excess water.
  2. Place into a bowl and mix in the yoghurt, seasoning and chopped mint.
