Egg Fried Rice
Serves: 2 adults or 4-6 children
  • 150g brown rice
  • 30g frozen peas
  • 30g frozen sweetcorn
  • 2 spring onions
  • 2 organic or free range eggs, mixed
  • coconut oil
  1. Firstly, cook your brown rice. (See recipe for infused brown rice.)
  2. Heat up your non-stick frying pan or wok and add a generous knob of coconut oil to the pan.
  3. Add your cooked rice, frozen peas and sweetcorn and stir.
  4. When the pan is getting nice and hot add your mixed eggs. Allow to sit for a few seconds and then stir with a wooden spoon. You will see that the egg begins to coagulate and cook and small pieces of egg will start forming around your fluffed up rice.
  5. Season, sprinkle with spring onions and serve.
