Rinse the berries well in a bowl of cold water to remove any dust, dirt etc. Drain.
Add the berries to a large saucepan with the spices and water.
Bring to the boil and allow to simmer for 45 minutes to an hour until the liquid takes on a deep purple colour and is reduced by about two thirds.
As the syrup cools, melt in the raw honey and stir well.
Once the syrup has completely cooled, strain well using a sieve or muslin cloth over a bowl and then pour into sterilised kilner top bottles (one large or two medium) and keep in a cool place.
