The Best Cookies

Not only do these tastes delicious.... like cookies should taste! But they are also boosted with goodness, however I am not going to pretend these are virtuous and "clean" they are cookies with some goodness added. Id rather eat delcious, slightly naughty food and enjoy it, than cardboard that makes me miserable. All of my recipes should taste good - otherwise, quite frankly whats the point!?
Ingredients
- 140g white spelt flour - or you can use free from gluten free if youd prefer
- 55g oats
- ½ teaspoon bicarbonate of soda
- ½ teaspoon baking powder
- 15g mixed seed blend
- 40g salted cashews
- 40g light brown muscavado sugar
- 30g coconut sugar (if you dont have this just use more of the muscavado)
- 110g melted unsalted butter
- A mix of white, milk and dark chocolate chopped up into chunks
- 2 eggs
Instructions
- Place the butter into a small saucepan and melt.
- Add oats, nuts and seeds to a blender or nutri bullet and blitz until a fine powder.
- Add flours and nutty/ seed/ oat flour into a bowl with a pinch salt, the baking and bicarbonate of soda and sugar(s). Mix
- Add eggs and melted butter to the flour bowl and mix all together.
- Add in the chocolate.
- I like to pop the bowl into the fridge for a bit to help firm up the dough slightly.
- Then I scoop small handfuls of dough and roll into generous balls and pop into the oven for 10 minutes. Have a look and see how they are doing and gently press them down with the back of a spoon to squash them slightly and make them go all gooey - place back in the oven for a couple more minutes (unless you like them really gooey.. which is also gorgeous!).
- Serve straight away with ice cream or place onto a wire wrack and cool.
